
Ingredients
- 1 1/2 cup of milk
- 1 tablespoon of cinnamon
- 1/4 tablespoon of ground cloves
- 1 cup of honey
- 2 tablespoon of 100% cocoa
- 3 eggs
- 1 cup of brown sugar
- 1 tablespoon of butter
- A little bit of grated nutmeg
- 1 tablespoon of baking soda
- 3 cups of flour
Directions
Step 1
- Separate the egg white from the yolk
- Beat the egg white until fluffy, and leave it at rest for later
Step 2
- Put the milk, cinnamon and ground cloves to boil in a pan
- Add the honey, and mix everything
- Add the cocoa and mix everything again. Wait until the mixture is cold.
Step 3
- Put the sugar, butter and egg yolk in a mixer
- Mix them until they are creamy, then add to the mixture from Step 2
- Keep mixing until well blended
- Add the nutmeg on the top of the mixture
Step 4
- Add the baking soda to the flour and sift them together
- Mix by hand with the cream from Step 3
- When the mixture is all blended, slowly add the egg white from Step 1
- Take the mixture to a pre-heated oven at 365 F for about 30 to 45 minutes
- To make sure the cake is ready, stick a toothpick in the middle of it. If it’s coming out clean, the cake is done. Otherwise, wait a little bit more.
Ganache Frosting
- 10 ounces of chocolate bites
- 1/2 cup of heavy cream
- Put the chocolate bites in a glass bowl for 30 seconds in the microwave
- Keeping mixing until is all blended. If needed, put it back in the microwave for additional 30 seconds
- Put the heavy cream in the microwave for 30 seconds
- Mix the heavy cream to the chocolate until the mixture is well blended
- The mixture should look like liquid chocolate
- Add the mixture on top of the honey cake. Enjoy!
