
Ingredients
- 1/2 cup of coconut oil
- 4 eggs
- 1 cup of raw sugar
- 1 teaspoon of vanilla extract
- 1 cup of orange juice (from the fruit)
- 2 cups of whole wheat flour
- 1 tablespoon of baking powder
- Grated orange rind from 1 orange
Directions
- Put the coconut oil, eggs, raw sugar, vanilla and orange juice in a mixer, and mix until well blended
- Transfer the mixture to a bowl
- Sift the whole wheat flour and baking powder on the mixture, and mix using a manual eggbeater
- When the mixture is well blended add the grated orange rind. Be careful and try not to reach the white part of the rind
- Take the mixture to a pre-heated oven at 350 F for about 30 to 40 minutes
- To make sure the cake is ready, stick a toothpick in the middle of it. If it’s coming out clean, the cake is done. Otherwise, wait a little bit more.
