
Ingredients
- 16 ounces of elbow macaroni
- 3 tablespoon of olive oil
- 1 onion
- 3 cloves of garlic
- 2 tomatoes
- 1 red pepper
- 1 orange pepper
- 2 cups of sliced broccoli
- 1/2 cup of water
- 8 ounces of cream cheese
- 1/2 cup of basil
- Salt and black pepper as needed
- Pine nuts
Directions
- Cook the macaroni al dente and leave it reserved for later
- Heat olive oil in a pan, and then add onion and garlic
- When the onion looks transparent you can add the tomatoes
- Let cook slowly until the tomato is soft, and add salt and black pepper
- Add slices of peppers and broccoli, and the water
- Cook at low heat until the broccoli is soft
- Add the cream cheese and mix until it is well blended
- Add the macaroni and basil
- Assemble the dish and add pine nuts and basil leaves on top
- Voila!
