Orange Cake

Ingredients

  • 1/2 cup of coconut oil
  • 4 eggs
  • 1 cup of raw sugar
  • 1 teaspoon of vanilla extract
  • 1 cup of orange juice (from the fruit)
  • 2 cups of whole wheat flour
  • 1 tablespoon of baking powder
  • Grated orange rind from 1 orange

Directions

  1. Put the coconut oil, eggs, raw sugar, vanilla and orange juice in a mixer, and mix until well blended
  2. Transfer the mixture to a bowl
  3. Sift the whole wheat flour and baking powder on the mixture, and mix using a manual eggbeater
  4. When the mixture is well blended add the grated orange rind. Be careful and try not to reach the white part of the rind
  5. Take the mixture to a pre-heated oven at 350 F for about 30 to 40 minutes
  6. To make sure the cake is ready, stick a toothpick in the middle of it. If it’s coming out clean, the cake is done. Otherwise, wait a little bit more.
  7. Yummy!

Apple Cake

Ingredients

  • 3 apples
  • 2 tablespoon of sugar
  • Juice from half lime
  • 3 eggs
  • 1 1/2 cup of brown sugar
  • 1 cup of coconut oil
  • 1 tablespoon of cinnamon
  • 2 1/2 cups of flour
  • 1 tablespoon of baking powder
  • 1/2 cup of walnuts

Directions

  1. Take two of the apples and peel them off, saving the peel for later
  2. Next proceed to dice the apples
  3. Add the sugar and the lime juice to the diced apples, and save for later
  4. Slice the third apple in four pieces, removing its seeds
  5. Put the eggs, brown sugar, coconut oil, the apple peel, and the four slices of apple in a mixer, and mix until well blended
  6. Transfer this mixture to a large bowl
  7. Then add the cinnamon and mix using a manual eggbeater
  8. Now sift the flour and baking powder, and mix using your hands until well blended like a cream
  9. Add the walnuts and mix using your hands
  10. Now add the mixture made of the two apples, sugar and lime juice
  11. Take the mixture to a pre-heated oven at 350 F for about 40 to 50 minutes
  12. To make sure the cake is ready, stick a toothpick in the middle of it. If it’s coming out clean, the cake is done. Otherwise, wait a little bit more.
