Tuna Sandwich

Ingredients

  • 20 ounces of wheat bread
  • 1 can of table cream
  • 1/2 can of tomato sauce for pizza
  • 2 cans of tuna
  • 1 green pepper
  • Salt and pepper as needed
  • 1 can of green olives
  • 4 cherry-tomatoes

Directions

  • Cut the crust off the bread and leave it for later
  • Save the green olives and cherry-tomatoes
  • Put the other ingredients in a processor and mix everything until well blended
  • Alternate layers of the mixture and bread in a baking dish glass, making lasagna-like layers
  • Decorate the top layer with the green olives and cherry-tomatoes
  • Cover the dish in plastic film, take it to the fridge and leave it there for 5 hours
  • Enjoy!

Honey Cake

Ingredients

  • 1 1/2 cup of milk
  • 1 tablespoon of cinnamon
  • 1/4 tablespoon of ground cloves
  • 1 cup of honey
  • 2 tablespoon of 100% cocoa
  • 3 eggs
  • 1 cup of brown sugar
  • 1 tablespoon of butter
  • A little bit of grated nutmeg
  • 1 tablespoon of baking soda
  • 3 cups of flour

Directions

Step 1

  1. Separate the egg white from the yolk
  2. Beat the egg white until fluffy, and leave it at rest for later

Step 2

  1. Put the milk, cinnamon and ground cloves to boil in a pan
  2. Add the honey, and mix everything
  3. Add the cocoa and mix everything again. Wait until the mixture is cold.

Step 3

  1. Put the sugar, butter and egg yolk in a mixer
  2. Mix them until they are creamy, then add to the mixture from Step 2
  3. Keep mixing until well blended
  4. Add the nutmeg on the top of the mixture

Step 4

  1. Add the baking soda to the flour and sift them together
  2. Mix by hand with the cream from Step 3
  3. When the mixture is all blended, slowly add the egg white from Step 1
  4. Take the mixture to a pre-heated oven at 365 F for about 30 to 45 minutes
  5. To make sure the cake is ready, stick a toothpick in the middle of it. If it’s coming out clean, the cake is done. Otherwise, wait a little bit more.

Ganache Frosting

  • 10 ounces of chocolate bites
  • 1/2 cup of heavy cream
  1. Put the chocolate bites in a glass bowl for 30 seconds in the microwave
  2. Keeping mixing until is all blended. If needed, put it back in the microwave for additional 30 seconds
  3. Put the heavy cream in the microwave for 30 seconds
  4. Mix the heavy cream to the chocolate until the mixture is well blended
  5. The mixture should look like liquid chocolate
  6. Add the mixture on top of the honey cake. Enjoy!

Mango & Strawberry Salad

Ingredients

  • 1 diced red onion
  • 1 diced tomato
  • 10 cherry-tomatoes sliced in two halves
  • 2 diced mangos
  • 1/2 box of diced strawberries
  • 2 smashed cloves of garlic
  • Salt and black pepper as needed
  • 1 tablespoon of apple vinaigrette
  • 2 tablespoon of olive oil
  • Parsley sliced in small pieces

Directions

  1. Put the onion, tomatoes, cherry-tomatoes, mango and strawberries in a bowl
  2. Add the garlic plus salt and pepper
  3. Add the vinaigrette and the olive oil, and mix everything
  4. For last, add the parsley
  5. Well done!

Bahia Clam

Ingredients

  • 11 ounces of clam
  • 1 lime
  • 1/2 cup of cashews
  • 1/2 cup of peanuts
  • 2 tablespoon of olive oil
  • 1 onion sliced in pieces
  • 3 cloves of garlic sliced in pieces
  • 1 tomato sliced in pieces
  • 4 small potatoes sliced in pieces
  • Cilantro as needed
  • 7 ounces of coconut milk
  • 1/2 cup of water
  • 1 tablespoon of palm oil

Directions

  1. Put the clams in a bowl and smash the lime on top, for cleaning
  2. Then wash the clam out and leave it to dry
  3. Put the cashew and peanuts in a blender, and mix until they become powered-like
  4. Put the olive oil, onion and garlic in a pan to lightly fry
  5. Then add the tomatoes, potatoes and cilantro
  6. Add the clam to the pan, and mix everything together
  7. Add the coconut milk, cover the pan and leave it cooking in low heat
  8. Wait until the potato looks soft, then add the mix of cashews and peanuts
  9. Add the water and keep mixing, to allow the mixture to blend
  10. Add the palm oil until the mixture is well blended
  11. Serve with white rice. Yummy!

Ingredients

  • 16 ounces of elbow macaroni
  • 3 tablespoon of olive oil
  • 1 onion
  • 3 cloves of garlic
  • 2 tomatoes
  • 1 red pepper
  • 1 orange pepper
  • 2 cups of sliced broccoli
  • 1/2 cup of water
  • 8 ounces of cream cheese
  • 1/2 cup of basil
  • Salt and black pepper as needed
  • Pine nuts

Directions

  1. Cook the macaroni al dente and leave it reserved for later
  2. Heat olive oil in a pan, and then add onion and garlic
  3. When the onion looks transparent you can add the tomatoes
  4. Let cook slowly until the tomato is soft, and add salt and black pepper
  5. Add slices of peppers and broccoli, and the water
  6. Cook at low heat until the broccoli is soft
  7. Add the cream cheese and mix until it is well blended
  8. Add the macaroni and basil
  9. Assemble the dish and add pine nuts and basil leaves on top
  10. Voila!

 

Homemade Bread

Ingredients

  • 2 1/2 cups of milk
  • 6 tablespoon of sugar
  • 1 pack of all natural yeast
  • 2 eggs
  • 2 tablespoon of butter
  • 1 tablespoon of baking powder
  • 2 cups of white flour
  • 2 cups whole wheat flour
  • 1 tablespoon of baking powder
  • 1 cup of mozzarella
  • 1 teaspoon of salt
  • Italian seasoning

Directions

  1. Warm the milk up just enough to feel it warm in the back of your hand
  2. Add 2 tablespoon of sugar and the all natural yeast
  3. Leave it at rest, for the yeast activation
  4. Meanwhile put in the mixer 4 tablespoon of sugar, the eggs and butter
  5. Once it is all mixed add the rest of ingredients, including the ones you left at rest
  6. Use a spatula to check when the dough is no longer sticking to the bowl
  7. Put the dough in a baking dish glass and cover it in plastic film
  8. Leave it at rest for about 1 to 2 hours (depending on the environment temperature)
  9. Take it to a pre-heated oven at 360 F for about 40 minutes
  10. To make sure the bread is ready, stick a toothpick in the middle of it. If it’s coming out clean, the bread is done. Otherwise, wait a little bit more.

 

 

 

 

Grandma Dulce’s Salpicão

Ingredients

  • 1 can of table cream
  • 3 tablespoons of mayonnaise
  • 2 grated onions
  • Salt and black pepper
  • 1 small  roasted chicken
  • 1 tomato sliced in small pieces
  • 3 peppers (red , orange ,yellow) sliced in fine stripes
  • 1 sliced green apple
  • 1 lime
  • 2 carrots sliced in small pieces
  • 4 potatoes sliced in small pieces
  • 1 can of palm heart sliced in pieces
  • 1 can of olives

Directions

  1. For the sauce, mix the table cream with mayo and onions. Salt and black pepper as needed. Leave it to rest in the fridge
  2. Shred the chicken in a bowl
  3. Add the tomato and the sauce
  4. Squeeze the lime on the apple slices (to prevent them to get dark)
  5. Cook the carrots and potatoes
  6. Add the palm heart and olives
  7. Put everything together in a bigger bowl. Voila!

Savory Quinoa Cake

Ingredients

Part 1:

  • 2 cups of flour
  • 1 cups of quinoa
  • 2 cups of milk
  • 1/2 cup of olive oil
  • 3 eggs
  • 1 cup of parmesan
  • 2 table spoon of butter
  • 1 tea spoon of salt

Part 2:

  • Any meat or vegetable you want

Part 3:

  • 1 cup of fresh mozzarella
  • 1 table spoon of baking powder

Directions

  1. Put all ingredients from Part 1 in a mixer
  2. When it’s all mixed you can add the ingredients of Part 2 (meat or vegetable). Sometimes you need to add another egg to make the dough smoother
  3. Now add the ingredients from Part 3 (mozzarella and the baking powder), and mix by hand
  4. Put the dough in a baking dish glass
  5. Take it to a pre-heated oven at 370 F for about 40 minutes
  6. To make sure the cake is ready, stick a toothpick in the middle of it. If it’s coming out clean, the cake is done. Otherwise, wait a little bit more.
