Ingredients
- 11 ounces of clam
- 1 lime
- 1/2 cup of cashews
- 1/2 cup of peanuts
- 2 tablespoon of olive oil
- 1 onion sliced in pieces
- 3 cloves of garlic sliced in pieces
- 1 tomato sliced in pieces
- 4 small potatoes sliced in pieces
- Cilantro as needed
- 7 ounces of coconut milk
- 1/2 cup of water
- 1 tablespoon of palm oil
Directions
- Put the clams in a bowl and smash the lime on top, for cleaning
- Then wash the clam out and leave it to dry
- Put the cashew and peanuts in a blender, and mix until they become powered-like
- Put the olive oil, onion and garlic in a pan to lightly fry
- Then add the tomatoes, potatoes and cilantro
- Add the clam to the pan, and mix everything together
- Add the coconut milk, cover the pan and leave it cooking in low heat
- Wait until the potato looks soft, then add the mix of cashews and peanuts
- Add the water and keep mixing, to allow the mixture to blend
- Add the palm oil until the mixture is well blended
- Serve with white rice. Yummy!
